How to increase stamina on a ride

Coach Scott,

Most of the time when I do a ride of more than 1.5-2 hrs., I find myself running out of stamina or the ability to a steady output. What training intervals can I do to smooth out my power delivery over the course of the ride and to stop the up and down energy fluctuations?
